This type of molasses, or petimezi, is a natural sweetener derived from the reduction of freshly pressed Firiki cider - and nothing else. Combining sweet and tart autumnal flavors, this syrup makes a wonderful topping on pancakes, yogurt or ice cream and a winning ingredient in salad dressings, sauces and marinades.
