Cultivation: The mild summer in Western Macedonia with the low night temperatures and the cultivation in fertile soils contribute to the production of superior quality medium beans. The cultivation of medium beans takes only three months and is the first beans harvested in Western Macedonia, to cook delicious bean soup, the national dish of the country.
Characteristics: The beans are small, oval in shape and white. It is a variety well adapted to the microclimate conditions of the area, with the result that the beans are easy to boil, tasty, and nutritious. They have a buttery texture, rich aroma and thin skin. Preparing for cooking is easy and is ideal for soups and salads.
