Tsanos Moustokouloura - Grape Must Cookies

Moustokouloura or grape must cookies are distinctly Greek and uniquely delicious. They're made of flour, oil, spices and must: the thick, unprocessed, freshly crushed grape juice that also contains the skins, stems and seeds of the fruit. Other wine-making regions in Europe use this sweet and nutritious ingredient mostly as a syrup, so grape must cookies are truly special in the Greek culinary tradition.
