Rusks are prominent in the Mediterranean diet, and more specifically its Cretan variance. Rusks, or paximadia, are basically pieces of twice-baked bread; baked dry to make it last for a long time. Wholegrain rusks are extremely rich in fiber and may help lower cholesterol and blood sugar. Round barley rusks are traditionally used to make Cretan Dakos, a divine salad of tomato, rusk and soft white cheese. Rusks are best enjoyed in salads, when they have soaked up the goodness of pure EVOO and other bright salad dressings, in soups, or any dish that calls for a wholesome, absorbent partner!
